what is a denver macaron?
Although they share a meringue-based lineage, the traditional French macaron and the Denver Macaron differ greatly in their origins, ingredients, and texture. The French version features an egg-based, chewy and shiny shell with a modest amount of filling, whereas its Denver cousin is a potato-based, fluffy alternative born in the Rockies that holds a mountain of filling. Ultimately, Denver macarons redefine macarons by offering a handmade, rustic, gluten-free, and always-vegan twist on the classic treat.

Our macarons are crafted using protein isolated from potatoes, which has a similar structural makeup to eggs and creates a beautiful meringue. By sourcing this potato protein directly from France, we’re able to make the most beautiful, completely plant-based and gluten-free macarons without compromise.
